Slow Roasted Salmon with Spicy Basil Crust

Cooking time 20 minutes
1 1/2 lb. of Organic Salmon filet
2 Cups of basil leaves
½ jalapeño seeded and chopped
¼ teaspoon of fresh ground black pepper
¼ teaspoon of sea salt
4 ounces of extra virgin olive oil
Zest of 1 lemon
Juice of 1 lemon
- In a blender, place basil, jalapeño pepper, black pepper, zest, and salt and two ice cubes, puree. While the blender is running pour the oil until well emulsified.
- Cover the salmon evenly with the puree and let it sit for about 15 minutes in the refrigerator, pull out 5 minutes before cooking.
- Heat oven to 250° F and bake salmon for 20 minutes
- Squeeze the juice of one lemon on top of salmon and serve.
