At Morsels in The Buff, my mission is to bring you the best of fine tasting food related to your health when it comes to food intolerances. My main goal is to target Food Intolerances and Gastrointestinal disorders. To provide you with food, support, and the information you need to feel safe in what it can be a toxic saturated environment.

The Chef, Culinary Nutritionist and Health Motivator
Mario Landaverde always believed that we are what we eat. He views food as medicine. Consuming fun, fresh, and organic nourishes us so we are able to achieve a healthy, productive, and blissful life.
A Chef for over 20 years, Mario’s experience includes cooking at fine restaurants and hotels throughout New York City. He worked at the Hudson River Club, the Rainbow Room, Beacon, the New York Palace Hotel, and the Grand Hyatt Hotels.
Mario has a Bachelor in Sciences of Culinary Nutrition and Dietetics from CUNY BA, and has a Great Kitchens certification from the National Foundation for Celiac Awareness. Mario is also a Holistic Health Coach, certified by the prestigious Institute of Integrative Nutrition and he is an aspiring Registered Dietitian.
Mario lives and works in Manhattan with his wife, Roselis. When she developed severe autoimmune diseases, Mario put his experience and skills to the test. Roselis developed severe intolerances to Gluten, Dairy and Processed Sugars. Her only solution was eating a GDS-Free diet.
Mario and his wife found that the culinary industry wasn’t prepared to deal with Roselis’ needs. They also found a growing number of people who shared her dietary needs, but didn’t know what to do about it. Mario and Roselis currently have a healthy GSD-Free Lifestyle, complimented by Bikram Yoga. Based on Mario’s guidance and experience, Roselis is the best evidence that a GSD-Free lifestyle can work.
Our logo is based on the Mayan glyph meaning “Cosmic Wizard.” This wizard is one who gains wisdom from the alignment of the heart and mind. This wisdom allows perception and a deeper understanding of the universe. At Morsels in the Buff we use this wisdom and perception as an inspiration for our mission to heal and help people on the road to a healthier life.
